When it comes to the local specialty of Otokuni area, Kyoto Prefecture,
bamboo shoot is well known as the taste of Spring.

At Kyoto Cuisine Uosu Sushi , its signature menu “Takenoko Sugata (stuffed bamboo shoot) sushi”,
let you taste bamboo shoot throughout the year.

Seasonal bamboo shoots harvested in the best season are being boiled and persevered for use.

The shoots are being hand-hollowed carefully and slowly cooked with Japanese sake and mirin cooking wine.
Soy sauce is not being used for seasoning is its main characteristic.
Lastly, stuffing vinegared rice mixed with ground Japanese pepper and yuzu as the fillings will make up this special Kyoto-style sushi and it can only be tasted here in Japan.

Moreover, their online shop also offers bamboo yokan and soymilk ice-cream made of syrup-soaked bamboo shoots.
